Apricot is often a freshly eaten fruit but the dried apricots of Malatya are highly demanded and consumed at both domestic and foreign markets. The ripened apricots are harvested and dried before they are packaged for sale following some fine process carried out in our plant. The apricots (complete, without kernel or half) are either dried being exposed to the sun or by the drying machines. In both cases, the apricots are dehydrated in a way it will have 22% water.
The apricot is processed inside the sulphur (sulphur dioxide, SO2) chamber to prolong its storage life and prevent it from fermentative concentration.
